Why Grams and ML Are Not the Same
Grams measure weight, and milliliters measure volume. The link between them is density, which is how many grams fit in 1 ml. The gram was first defined using water, so 1 ml of water weighs very close to 1 gram. The USGS puts the exact figure a little lower, at 0.998 grams per ml at 70°F (21°C), which is too small to matter in a kitchen.
One Gram Is Not Always One ML
Only water and liquids close to it, like milk and cream, convert at about 1 to 1. Oil and sugar are lighter per ml, so the same grams take up more space. Honey and salt are heavier per ml, so the same grams take up less. Pick the right ingredient before you convert.
