Why Cocoa Weighs Half as Much
Cocoa powder is ground very fine, and it traps a lot of air in the cup. Chips are solid pieces of chocolate with fat and sugar packed inside. That is why a cup of cocoa weighs 84 grams while a cup of chips weighs 170 grams.
Natural and Dutch Process Cocoa
Dutch process cocoa is treated with an alkali to lower its acid, as the USDA food name shows. Both kinds weigh about the same per cup, so the charts work for either one. They do bake differently, so use the type your recipe names.
